Colourful and fresh this classic salad is perfect for summer, made with wild caught tuna and organic ingredients...
Ingredients

400g of salad potatoes

Olive oil
-
4 eggs
-
1tbsp of balsamic vinegar

2 tbsp of capers
-
60g of sun dried tomatoes (chopped)

½ a red onion (sliced finely)
-
150g of baby spinach
-
2 x cans of wild caught tuna
Directions
Preheat the oven to 200C/fan 180C/gas 6. Thickly slice the potatoes, leaving the skin on, then toss with 2tsp of olive oil and seasoning and tip onto a baking tray. Cook for 20 minutes, tossing halfway through, until your potatoes are golden and crisp.
In the meantime, boil your eggs for 8-10 minutes, depending on how you like them and plunge into cold water for a few minutes. Remove the shells and cut them into quarters.
In a large bowl mix together 2tbsp of olive oil, the balsamic vinegar, capers and chopped sun dried tomatoes with seasoning. Then toss in the onion, spinach, tuna and potatoes and toss it all gently together, before topping with the egg and serving.
