Christmas Centrepieces: Beef
Britain has been eating Turkey, Duck and Goose at Christmas for centuries. Nothing can beat a bird with all the trimmings, right? Well, our organic beef wants a quiet word before you make your centrepiece decision this year. Don’t rule out one of our showstopping cuts before you’ve read what we can bring to the table.
Grass-Fed Goodness
All of our beef joints are sourced from native-breed cattle. Our cattle are slowly reared and 100% grass-fed on organic pastures, ensuring the most natural meat possible is nurtured. Refraining from rushing this process allows extra inter-muscular fat to spread. Thus, creating a joint that is flavoursome throughout. Our traditionally-trained butchers then dry-age the meat for a minimum of 21 days. This process encourages each cut to develop a deep complex flavour and superb succulence after the cooking process.
Our Options
No matter the shape and size of your Christmas feast, we’ve got the perfect beef joint to steal the show. If you’re after the most luxurious joint available, look no further than the 28-Day Dry Aged Trimmed Rib of Beef, or its maverick mouth-watering Whisky-infused brother. We’ve also got Rib on the Bone, Boned & Rolled, Silverside, Topside, Sirloin, and Whole Fillet. All of our joints look and taste the part when flash roasted for a classic medium rare cook. Alternatively cook low and slow in its own juices for a satiating bite.
Constructing the Feast
If you’re keeping things classic with our grass-fed Topside, follow our easy recipe and reap the rewards. Need some inspiration for the big day? Test your culinary prowess and create a sumptuous beef wellington with our juicy Whole Fillet. Crispy puff pastry and rich mushroom duxelles coating divine organic beef doesn’t sound bad to us. We’ve also got the perfect guide to bring our Trimmed Rib of Beef to justice. Season with mustard and pepper and serve to guests to ensure there is holiday cheer flowing through your household.
Now you’re ready to select your beef joint, you can start thinking about all those trimmings. We suggest bathing our White Potatoes in Ossa Beef Fat and a selection of seasonal herbs to produce the crispiest, fluffiest roast potatoes around. Consider saving some of the excess roast beef fat to combine with your choice of organic red wine for a rich and fruity red wine jus. Of course, no beef roast is complete without an organic Yorkshire pud. Look no further than our Herby Yorkshire pudding recipe for your fix. All that’s left to do is select your favourite seasonal vegetables and add a couple of dollops of Biona Horseradish Sauce and you’ve got yourself a Christmas feast that the whole family will adore.
