BBQ Aubergine with Feta

Ingredients

1 aubergine, cut into ½ inch slices

1 lemon, juiced

1 tbsp oregano
-
2 garlic cloves, minced

1 tsp smoked sea salt

extra virgin olive oil

100g medita cheese
Directions
Slice and salt the aubergine generously. Lay the slices on a large tray lined with a paper towel. Allow to sit for 20 to 30 minutes and crack on with other things. Keep wiping eggplant dry and remove excess salt before grilling for best results
In a small bowl, combine 3 tablespoons olive oil with the lemon juice, garlic, and oregano. Add a pinch of salt to taste and set aside to rest
Brush the aubergine slices on one side with your oil mix
Fire up the BBQ and place the aubergine slices oil side down for around 3 minutes or until some char marks begin to appear. Now brush the other side before flipping over and grilling for another 3-4 minutes
Arrange the aubergine fresh from the BBQ on a large plate and crumble your medita/feta. Finish with a drizzle of your leftover oil mix and tuck in
