Ingredients: 4 beetroots (cooked); 80g Medita cheese; 2 tbsp parsley, chopped; 3tbsp lemon juice; 3tbsp olive oil; 2 cloves garlic, crushed; salt and pepper

Marrying sweet and salty flavours this salad is bright and refreshing, best enjoyed on a summer's day alongside some crusty sourdough bread.

Ingredients

4 beetroots (cooked)
80g Medita cheese
2 tbsp parsley, chopped
3tbsp lemon juice
3tbsp olive oil
2 cloves garlic, crushed
salt and pepper

Directions

Chop the beetroot and Medita into small cubes.
Make your dressing by mixing together the lemon juice, garlic, olive oil and salt and pepper.
In a bowl combine the beetroot, Medita, parsley and dressing in a bowl and toss until combined.
