This velvety smooth dip is more than just a dip. That’s why we’re sure you’ll want to dunk your croudites, grissini sticks and pitta breads and not just have a little dip. With the sweetness from the broad beans, punchy fresh mint and a salted creaminess from the feta, you’ll look forward to broad bean season each year when you can dig into this dunk once again.
Ingredients
500g Broad Beans (peeled)
100g Medita or Feta
10g Fresh Mint Leaves (chopped)
1 Garlic Clove (chopped)
Olive Oil
Lime Juice
Salt
Directions
Cook the broad beans in a saucepan of boiling salted water for 2-3 minutes or until just tender. Refresh under cold running water then drain.
In a food blender, add the beans, feta, mint, garlic and a pinch of salt and blend until almost smooth. With the blades running, add the olive oil in a thin steady stream until silky smooth!
Scoop into a bowl and drizzle a little olive oil and a squeeze of lime over, then dunk away!
