Creamy Broccoli Pasta Recipe

This super simple dish will only take 25 minutes of your time and makes for a tasty and nutritious midweek meal.
Ingredients

150g spaghetti (or pasta of choice)

1 head broccoli florets

60 grams vegetable broth

1 tsp olive oil

1 onion, diced
-
2 cloves garlic
-
120g soft cheese
-
½ tsp honey
-
1 tsp fresh lemon juice

sea salt, to taste

cracked black pepper, to taste

50g cheddar cheese, grated
Directions
Bring water to a boil and cook the spaghetti according to the package instructions.
In a low medium heat pot add the olive oil followed by the broccoli, onion, garlic and organic vegetable broth. Allow everything to simmer for 8-10 minutes.
Add the cream cheese along with salt and pepper to taste. To give it another kick, add a few splashes of lemon juice and honey to the mix.
Once cooked, drain the pasta in a sieve, saving a cup of pasta water.
Add this pasta water to the mix one spoon at a time until a rich, creamy consistency is achieved. Continue cooking on medium heat for 5 minutes and add a pinch of salt and pepper if needed.
Decanter into a bowl and top with organic cheddar before serving.
