Coronation Quiche Recipe

Ingredients: 125g plain flour; 25g butter, diced; 25g tallow; 2 tbps milk; sprinkle of salt; 2 medium eggs; 125ml milk; 175ml double cream; 100g grated cheddar; 180g spinach, chopped; 60g cooked broad beans (or alternative); 1 tbsp tarragon; sprinkle of salt; sprinkle of pepper; 3 asparagus spears

Ingredients

Pastry

125g plain flour
25g butter, diced
25g tallow
2 tbps milk
sprinkle of salt

Filling

2 medium eggs
125ml milk
175ml double cream
100g grated cheddar
180g spinach, chopped
60g cooked broad beans (or alternative)
1 tbsp tarragon
sprinkle of salt
sprinkle of pepper
3 asparagus spears

Directions

Making the pastry (alternatively use pre-bought!)

For the pastry, sieve the flour and salt into a bowl; add the tallow and butter and rub the mixture together using your fingertips, achieving a breadcrumb-like texture. Add the milk a little at a time until the ingredients form a dough. Cover and allow to rest in the fridge for 45 minutes
Sprinkle some flour on a work surface and roll out the pastry to a circle a little larger than the top of the tin and approximately 5mm thick
Line the tin with the pastry. Ensure no holes are left as this could allow the mixture to leak through. Once complete, cover and rest for a further 30 minutes in the fridge

Fill it up

Preheat the oven to 190°C
Line the pastry case with greaseproof paper, add baking beans and bake blind for 15 minutes, before removing the greaseproof paper and baking beans
Reduce the oven temperature to 160°C
Beat the milk, cream, eggs, herbs and seasoning together until a mixture is formed
Scatter half of your grated cheddar in the blind-baked base. Now spoon your chopped spinach, beans and herbs on top before adding the beaten mixture liquid mixture
Being careful not to damage the pastry case, give the mixture a gentle stir to ensure it is evenly distributed
Top with the remaining cheese and asparagus spears and bake for 20-25 minutes, making sure the mixture is set and starting to form a golden crisp
