Kale and Spinach Pesto Pasta Recipe

Inspired by a BBC Good Food recipe this tasty dish is an amazing way to use up leftover kale. Whizz this superfood up into a quick, easy and delicious pesto and stir into organic pasta.
Ingredients

45g of pine nuts

45g of vegetarian hard cheese

1 clove of garlic
-
40ml of olive oil
-
40g of kale
-
20g of Spinach
-
Juice of ½ a lemon
-
Salt and pepper (to taste)

Organic pasta to serve
Directions
Put the pine nuts, vegetarian hard cheese, garlic, oil, kale spinach and lemon juice into a blender and whizz to form a nice smooth paste, then season with salt and pepper.
Cook your pasta, drain, then add the your pesto to the pan and stir in over a low heat until the pasta is nicely coated and hot.
Serve, topping with extra parmesan and a couple leftover spinach leaves and enjoy!
Recipe Note
For a kick of spice add a sprinkling of crushed chilli flakes into your pesto, or to make it creamier mix in a tablespoon of cream fraiche when adding to your pasta.
