Ingredients

1 white onion

1 carrot
-
50g butter
-
2tsp thyme
-
3 bay leaves
-
600g of fresh tomatoes

800ml chicken or vegetable stock

2tbsp double cream
-
Fresh basil
Directions
Chop up all your vegetables, dicing the onions, finely chopping the carrots and tomatoes.
Place your butter in a saucepan over a medium heat and add in the onions and carrots, cooking them until they have softened.
Add the thyme and bay leave and cook for a further 1 minute before adding in the tomato and the stock.
Simmer for around 30 minutes and remove the bay leaves.
Add the cream and then remove the saucepan from the heat, then whizz with a stick blender until nice and smooth.
Put the saucepan back on the heat and then serve, topping each bowl with a swirl of cream and a couple of basil leaves.
